As we make more trips to the market we will add more dishes that we prepared using the produce. On the whole these will be simple dishes designed to emphasise the fresh quality produce which on the whole need little enhancement. Please also send us your recipes.
Spiced blackened swordfish with crushed roast new potatoes and fresh asparagus.
Spiced Blackened Swordfish
The Swordfish steaks we got from Furness Fish were the freshest I have bought in the Uk and I really wanted to make sure they were cooked to perfection. Too much and they would dry out and be a bit of a waste of such good produce. I dipped them in seasoned flour (flour, salt, ground anise seeds, ground cardamom and paprika and black pepper - spices from Noel Fitz John's in the green market). Heated a cast iron pan to a very high heat and seared the steaks for 1 minute each side. They were then placed on a roasting dish and drizzled with lemon and oil and cooked at 175 degrees for 8-10 minutes. The result was perfectly cooked extremely juicy succulent swordfish with a light spicing and a lovely browned and seasoned exterior.
Crushed Roasted new potatoes
Using larger new potatoes boil until cooked through. Leave to cool a little and crush each one lightly with the heel of your hand. Put in a roasting dish with preheated olive oil and sprinke Gros sel de Guerande (or any good salt crystals or flakes) generously over the potatoes and roast at 175-200 degrees for 30 minutes until they start to brown and take some colour.
Fresh asparagus
Boil until cooked they way you like drain and serve with shavings of fresh parmesan cheese.
